One of the quickist ways I know of evaluating the potential of a niche topic is to look at releated keyword phrases with 3 or more words. If a keyword phrase has a high monthly search count with a low number of competitors, then this is a good indication that the niche may be a viable one for further research.

The guys at CheckRankings have created a free and paid version of a keyword suggestion and research tool to help you with your market research. It is a very useful tool for search engine optimization and Google Adwords campiagns. You simple enter a keyword and the tool pulls back the number of monthly searches, the number of sites competing for the keyword, and the number of competiting Adwords. Most of data results comes from Google because it is the largest search engine that draws the most website traffic.

Just found this great free tool at SpyFu.com.  SpyFu.com is in beta and lets you do some nifty keyword phrase research that will show you who and what your competitors are doing with that keyword.
